For AirPods series products, if you want to activate the spatial audio function, just go to “Control Center > Long Press Volume” to find the button to activate spatial audio. Note: For audio sources that support Dolby Atmos, in addition to the “Dolby Atmos” icon, you can also see that the activation button will display “Spatial Audio”; if it is a pure stereo source, although the head tracking function can also be activated, the icon will be displayed as “Spatial Stereo”.
If you want to disable this feature by default, you can go to “System Settings > Accessibility > AirPods” settings to set whether to activate this feature for music, video, and different AirPods.
Dolby Atmos
From my impression, the feature is Dolby Atmos, which is supported by a wide range of devices, because even ordinary stereo devices can support it. So basically, as long as the audio source provides Dolby Atmos, it should automatically start when Apple Music is played.
However, if you want to confirm that all songs with Dolby Atmos sources must enable Dolby Atmos support. Then you can go to “Music > Dolby Atmos” in the system settings and select “Always On”; conversely, if you feel that the effect of dynamic audio is not to your liking, you can also select “Off” to listen to music that supports Dolby Atmos in traditional stereo.
As an aside, if you feel that the volume of Dolby Atmos songs is particularly low (or the general stereo sound is very loud), you can activate “Music > Volume Balance” in the system settings to basically avoid such volume difference problems.
